Nonna's Sunday Sugo

Every Sunday the whole house smelled of this. Nonna never measured a thing. She'd just know by the smell when it was ready.

Ingredients

2 tbsp olive oil
1 onion, finely chopped
4 cloves garlic
2 tins San Marzano tomatoes
A handful of basil
A pinch of sugar
Salt & pepper

Method

Warm the oil and soften the onion slowly, about 10 minutes.
Add the garlic until fragrant.
Crush in the tomatoes and bring to a gentle bubble.
Drop in the basil, a pinch of sugar, and let it murmur for two hours.
Season, and taste it the way she would, off a wooden spoon.
